Mexican Midnight is a Mexican-style cerveza brewed from a partial-mash recipe
shooting for a flavorful, smooth taste. The recipe was derived to pay homage to the
simple, yet refreshing nature of cerveza.

Brewer's Thoughts:
I was initially shooting for a Corona-color beer, but I quickly found that the
the beer was going to be more towards the Dos Equis Amber color due to the color of the
malt extract used in the recipe. The unique component
of any Mexican or Asian beer (and even some American beers) is the use of rice within
the recipe. Rice impacts the beer by providing smooth flavor and more fermentable sugars,
as well as affecting the final color of the beer. To keep the beer as simple
as possible, there were no other specialty grains and the use of hops was kept at
a minimum.
